As I am from South India, our Chicken Gravy Recipe is made in Andhra style which is spicy and colourful. Whether it’s a restaurant or Dhaba, this recipe is considered to be the most ordered recipe among the non-vegetarian section.

TIPS to make perfect Chicken Gravy Recipe:
- Chicken should be cleaned in water to remove blood strains.
- We add turmeric powder and salt while marinating, they not only act as antibacterial but also help in absorbing spices.
- We can add ginger garlic paste while marinating or add after frying onions.
- Instead of adding tomatoes, we can make tomato puree to get instant gravy. We can substitute fresh coconut paste if cashew is not available.

Ingredients
- Chicken – 500 gms.
- Turmeric powder – ½ tbsp.
- Salt – 1 ½ tbsp.
- Red chilli powder – 1 tbsp.
- Cinnamon sticks – 1-inch size 2 No.
- Cloves – 5 No.
- Green cardamoms – 3 No.
- Cashew – 3 tbsp.
- Poppy seeds – 1 tbsp.
- Oil – 5 tbsp.
- Onions – 1 cup
- Green chillies – 4 No.
- Ginger garlic paste – ½ tbsp.
- Tomatoes – 1 cup
- Mint leaves – 1 tbsp.
- Coriander powder – 1 tbsp.
- Coriander leaves – 2 tbsp.
Instructions
- Clean chicken and let’s marinate by adding salt, turmeric powder and red chilli powder. Mix well and marinate for an hour.
- Now let’s prepare for spice powder, dry roast cinnamon sticks, green cardamom, cloves, cashew and poppy seeds.
- Based on the spice we add its roasting time depends so we need to add poppy seeds at the end and sauté for few seconds and keep aside to cool.
- In a pan heat oil and add onions and green chillies. After a while add ginger garlic paste.
- Sauté for a while till its raw flavour is cooked and make sure bottom doesn’t stick.
- Add tomatoes and cook till they turn soft with lid covered.
- Put chicken and cook further on medium temperature till it becomes soft with lid covered.
- Meanwhile, make a soft paste of above roasted spices by adding little water.
- Add spice paste, mint leaves and little water to obtain gravy and cook for 2 minutes.
- When you get gravy, sprinkle coriander powder, coriander leaves and cook for few seconds.
Garnish with coriander leaves, Chicken Gravy Recipe goes well with steam rice or Indian bread recipes.

How to make Chicken Gravy Recipe:
1. Clean chicken and sprinkle turmeric powder, salt, red chilli powder and mix well. Marinate for an hour with the lid covered.
2. In a pan dry roast cinnamon sticks, cloves, green cardamoms and cashew.
3. In the end, add poppy seeds and roast for a second and transfer to another bowl.
4. Heat oil in a pan, add sliced onions, green chillies and ginger-garlic paste.
5. Add sliced tomatoes and cook further with the lid covered till they turn soft.
6. Put marinated chicken pieces and cook for 10 minutes with the lid covered.
7. Add cashews and other spices in a blender, make powder, and if needed add little water to make a smooth paste.
8. Pour the above mix into chicken gravy, add Masala liquid and mix well.
9. Add mint leaves and if needed add a little more water and cook further for 5 minutes with a lid covered.
10. When chicken is cooked, add coriander powder and cook for a minute so that gravy thickens.
11. Sprinkle coriander leaves and mix well so that it acquires aroma.
12. Garnish Chicken Gravy Recipe with coriander leaves and serve hot.
