Spicy Egg Masala Recipe is one of the simple recipes having a punch of spices and yummy gravy. This recipe goes well with plain rice, biryani, or chapatti.
I love making spicy foods during the winter/rainy season, you may adjust spices based on your taste, you can increase or decrease garam masala powder based on your taste.
During cooking, many people like to fry eggs and then add to the gravy, but I wanted to keep them as they are and made few pokes to Andhra Egg Curry so that it absorbs spices and leaves masala flavor.
Usually, we add onions, tomatoes to get gravy and add spices to give hot and spicy punch to the gravy. Eggs are then pierced to absorb spice gravy and cook on low to medium temperature.
If I am right every house that eats egg and non-vegetarian recipes keeps eggs at their home. When you are out of veggies, Egg Masala Recipe can be made as a special dish.
Every part of the globe has its own kind of making gravy, our version resembles Dhaba style that is the reason it goes well either with rice variant or with bread variants.
In order to get the unique flavor to egg, first, they are fried in a mix of oil and spices and then added to tomato gravy.
TIPS to make perfect Spicy Egg Masala Recipe:
- Add little salt while boiling eggs so that they boil without breaking.
- If you like crispy egg crust then fry till its surface turn golden brown and crispy.
- When eggs are pierced they tend to absorb spices and give good taste even to eggs.
- If you do not have all spices then you can skip some of them and add garam masala powder.
- Slice tomatoes into small pieces to cook fast and give yummy gravy.
- We can even make a paste of onions, cinnamon stick and cloves to get gravy.

Spicy Egg Masala Recipe is one of the simple South Indian Style recipes with the blend of spices which goes well with plain rice, biryani or chapatti.
Ingredients
- Eggs – 6 No.
- Water – Required qty.
- Salt – 2 ½ tbsp.
- Oil – 7 tbsp.
- Turmeric powder – ½ tbsp.
- Red chilli powder – A pinch
- Coriander powder – 1 ¼ tbsp.
- Cinnamon sticks – 3 No.
- Cloves – 4 No.
- Green Cardamom - 2 Nos.
- Bay leaf – 2 No.
- Cumin seeds – ½ tbsp.
- Onions – 1 bowl 3 large sizes, finely sliced
- Green chillies – 2 tbsp.
- Ginger garlic paste – 1 tbsp.
- Curry leaves – 1 tbsp.
- Tomatoes – ½ bowl 3 large sizes, finely sliced
- Coriander leaves – 2 tbsp.
Instructions
- Boil eggs for 15 minutes by adding little salt so that they do not break.
- Once eggs are boiled, heat oil in a pan and add salt, turmeric powder, coriander powder and red chilli powder.
- Remove eggshells and pierce them so that it can absorb spices. Put them in the spice mix and roast for a while.
- Transfer to another bowl and little more oil and fry cloves, cinnamon sticks, bay leaves, green cardamoms and cumin seeds.
- Mix well and add sliced onions and green chillies, mix and add ginger garlic paste.
- Saute for a while and add curry leaves and tomatoes.
- Sprinkle salt, red chilli powder and turmeric powder. Cook further till tomatoes turn soft with lid covered.
- Add water and let it boil, put eggs and close the lid till you get a thick gravy.
- Sprinkle coriander powder to get thick gravy and add coriander leaves and mix well.
Serve Egg Masala Recipe either with steamed rice or with chapati.

How to make Spicy Egg Masala Recipe:
- Put eggs in a vessel and add 1 tbsp. salt so that eggs do not break while boiling. Cook for 15 minutes with lid covered.
2. In pan heat 3 tbsp. oil, add a pinch of turmeric powder, red chilli powder and little salt.
3. Add ¼ tbsp. coriander powder and mix well, pierce eggs and place them in this spice mix.
4. Roast eggs for a while till the spice mix sticks to the skin of the egg, transfer to another bowl, keep aside.
5. In the leftover spice oil, add 4 tbsp. oil.
6. Add bay leaf, cumin seeds, finely sliced onions and green chillies.
7. Put ginger garlic paste and sauté till its raw flavor is cooked and onions turn soft.
8. Add curry leaves, sliced tomatoes, ½ tbsp. turmeric powder and 1 ½ tbsp. salt.
9. Sprinkle red chilli powder and mix well. Cook for a minute with lid covered till tomatoes turn soft.
Note: If you are cooking on medium or high flame then we need to stir so that bottom doesn’t stick and get burnt.
10. Add little water and close the lid till water starts boiling.
11. Put eggs and cook for 2 minutes with lid covered till you get a thick gravy.
12. Sprinkle coriander powder and coriander leaves and mix well.
13. Transfer Spicy Egg Masala Curry to serving bowl and garnish with coriander leaves.
