Chicken pieces are cut into long and thin slices so that when they are marinated in buttermilk they turn to be soft when deep fried. Few people marinate overnight in buttermilk so that we get a very soft texture.
This recipe is served as a starter snack, few people like to have this recipe along with egg noodles or fried rice as this is a dry snack. We can even bake these pieces by applying a thin layer of oil. If you are diet conscious we can even air fry.
Tips to make the perfect Chicken Majestic Recipe:
- Cutting the chicken into thin and long pieces will not only makes it absorb all spices while marinating but also deep fry easily.
- We have used the deep fry method to prepare chicken pieces for seasoning. We can also bake or pan-fry them.
- Marinating chicken for a minimum of 2-4 hours will give you soft and authentic output.
- If you are not well prepared for 4 hours of making this recipe, then soak chicken pieces in buttermilk for 20-30 minutes and then marinate for 5-10 minutes before deep fry.
- We can even marinate this recipe overnight by putting it in a refrigerator.
- While deep frying pieces, we need to maintain medium to high temperature or else chicken pieces absorb more oil.
- During deep fry, do not over-crowd pieces, always put them in small batches.
- Overcrowding pieces will reduce oil temperature thus making pieces cook slowly and making it absorb more oil.

Ingredients
- Boneless Chicken – 500 gms.
- Salt – ½ tbsp.
- Black pepper powder – ¼ tbsp.
- Turmeric powder – ¼ tbsp.
- Red chili powder – ½ tbsp.
- Ginger garlic paste – 1 tbsp.
- Corn flour – 1 tbsp.
- All-purpose flour/ maida – 1 tbsp.
- Curd – 2 large tbsp.
- Egg – 1 No.
- Oil to deep fry.
- Garlic – 1 tbsp. minced
- Ginger – 1 tbsp. grated
- Green chilies – 1 tbsp.
- Chilli paste – ½ tbsp.
- Fresh cream – ½ cup
- Garam masala powder – ½ tbsp.
- Curry leaves – 1 tbsp.
Instructions
- Cut chicken pieces into thin and long pieces i.e., 2-3 inches long with a centimeter width.
- Clean pieces and put them in a mixing bowl.
- Sprinkle salt, turmeric powder, maida flour, corn flour, pepper powder, red chili powder, ginger garlic paste, curd and egg.
- Mix all ingredients and keep aside with a closed lid to marinate for 2-3 hours (overnight recommended for soft texture)
- Heat oil in a pan with medium to high flame, if oil is at a low temperature there is a chance of excess oil absorption.
- Deep fry marinated pieces till they turn a golden brown color. Drain excess oil and transfer to another plate.
- In another pan add little oil and put minced ginger, garlic and green chilies, Schezwan sauce and fresh cream.
- Mix all ingredients and cook for a second so that we get a thick sauce.
- Add fried pieces and mix well so that sauce gets coated with chicken pieces.
- Sprinkle a little garam masala powder, black pepper powder, salt, curry leaves and coriander leaves.
- Mix well and serve the chicken majestic recipe hot accompanied by fried rice or noodles.

How to make the Chicken Majestic Recipe:
1. Ask the butcher to cut chicken pieces into 2-inch size thin and long pieces.
2. Put chicken pieces in a mixing bowl and sprinkle salt, pepper powder and turmeric powder.
3. Add red chili powder, ginger garlic paste, corn flour and all-purpose flour (maida).
4. Put a chunk of curd, egg and mix well. Place a lid and marinate for 2-3 hours.
5. Heat oil in a pan, put marinated pieces in oil and deep fry till they turn a golden brown color. Transfer to another plate.
6. In a pan add 2 tbsp. oil and add minced garlic, grated ginger and green chilies.
7. Put chili paste and fresh cream. Mix all ingredients and cook for a second.
8. Add fried chicken pieces in the above sauce and mix so that the spices get coated well.
9. Sprinkle a pinch of salt, black pepper powder, garam masala powder and a few curry leaves.
10. Mix all ingredients and garnish with coriander leaves. Serve the chicken majestic recipe hot.
