Mouthwatering creamy gravy is made by adding almonds, cashews, and fried onions. Most of us think Mughlai chicken Recipe turns rich by added spices but the truth is that fried onions, dry fruits and ghee make it rich either by looks or with taste.
Chicken is then cooked with a blend of oil and ghee by adding traditional spices. Dry fruit paste is then added and cooked to get creamy gravy. This recipe tastes great either with Indian bread (Naan, parathas, or roti) or with rice recipes (biryani or simple steamed rice).

- Usually, we cook chicken half-time without a lid and half-time with a lid and cashew paste to get the perfect taste.

Mughlai Chicken Recipe is one of the royal dishes made on special occasions which has a creamy texture with mild spicy gravy.
Ingredients
- Chicken – 500 gms.
- Turmeric powder – ½ tbsp.
- Salt – 1 ½ tbsp.
- Black pepper powder – ½ tbsp.
- Ginger garlic paste – 1 ½ tbsp.
- Curd – 1 cup
- Almonds – 12 No.
- Cashew – ¼ cup
- Fried onions – 1 cup
- Water – required
- Oil – 3 tbsp.
- Ghee – 1 tbsp.
- Cinnamon sticks – 3 No.
- Cloves – 7 No.
- Green cardamoms – 2 No.
- Cumin seeds/ jeera – ½ tbsp.
- Black peppercorns – ½ tbsp.
- Bay leaf – 1 No.
- Coriander powder – 1 tbsp.
- Cumin/ Jeera powder – ½ tbsp.
- Red chili powder – 1 ½ tbsp.
- Green chilli – 1 No.
- Fresh cream – 2 tbsp.
- Coriander leaves – 2 tbsp.
Instructions
- Cut Chicken pieces into medium size, clean and put them in a mixing bowl.
- Sprinkle turmeric powder, salt, ginger-garlic paste, curd and black pepper powder.
- Mix all ingredients and marinate for 30 to 60 minutes at room temperature.
- Meanwhile, slice onions into thin wafers and fry in ghee till they turn crisp and golden brown.
- In a mixer grinder put above onions, almonds and cashew. Make a soft paste of them by adding little water.
- Add a little 2 tbsp. oil and 1 tbsp. ghee in 2:1 proportion and add cinnamon sticks, green cardamoms, black peppercorns, cloves, cumin seeds and a bay leaf.
- Add marinated chicken and sprinkle red chilli powder, jeera powder and coriander powder.
- Mix all ingredients and cook for 10 minutes till oil gets separated.
- Add almond-cashew paste and add little water to get soft gravy.
- Cook for 10-15 minutes on medium flame with lid covered.
- Once the gravy thickens just to give a mild spice taste we add 1-2 No. green chilly.
- Serve Moghlai Chicken Recipe topped with fresh cream and coriander leaves.

How to make Mughlai chicken recipe:
1. Clean chicken pieces and put them in a mixing bowl. Add turmeric powder, 1 ½ tbsp. salt, black pepper powder.
2. Add ginger garlic paste and curd. Mix well and marinate for an hour.
3. In a mixer grinder add almonds, cashew, fried onions, little water to make a soft paste. Transfer to another bowl, keep aside.
4. Heat oil in a pan, add ghee, cinnamon sticks and cloves.
5. Add green cardamoms, cumin seeds, black peppercorns and a bay leaf.
6. Put marinated chicken, coriander powder, cumin powder and red chili powder.
7. Mix well and cook for 10 minutes on low to medium flame.
8. Add cashew paste, 250 ml. Water and mix well. Close the lid and cook for 15 minutes.
9. Put slit green chili, fresh cream and garnish with coriander leaves. Serve Mughlai Chicken Recipe hot.
