Most of the time, we often make mistakes in choosing the right meat for our recipes. Our recipe tastes great when we have tender meat. If you are not sure ask the butcher regarding its tenderness.
If you are not sure then pressure cook for 1 or 2 whistle blows and then check its status. We cook it and roast meat along with its stock only when it’s almost cooked. As we cook it along with its stock, our mutton roast recipe will be a bit soft and juicy.
We can serve this recipe along with rice or as a side dish along with chapatti. As our recipe is a dry version, to give it a feel of dry we have added dry coconut powder which not only makes it aromatic but enhances its flavour.
In our recipe, we have dry roasted all the spices on low flame to give it a perfect taste, if you do not have time or spices we can directly sprinkle readymade mutton masala or with regular garam masala. But do not skip adding coconut powder.
Tips to make a perfect mutton fry recipe:
- Try to bring tender meat so that it gets cooked fast and tender meat has a good flavour.
- Based on the tenderness of the meat, cooking time depends. If meat is not tender add 2-3 spoons of alcohol or put raw papaya while pressure cooking.
- If you do not have all the spices and want to skip making spice powder we can simply add readymade meat spice powder.
- While adding spice powder, add it while there in stock so that mutton pieces can absorb spices.

Ingredients
- Mutton – 500 gms.
- Turmeric powder – ½ tbsp.
- Salt – 1 ½ tbsp.
- Oil – 5 tbsp.
- Water – 1 bowl
- Coriander seeds – 1 tbsp.
- Cumin seeds – 1 tbsp.
- Fennel seeds/ sonf – 1 tbsp.
- Cloves – 6 No.
- Cinnamon stick – 2 No.
- Black peppercorns – 1 tbsp.
- Green cardamoms – 3 No.
- Dry red chillies – 3 No.
- Curry leaves – 2 tbsp.
- Onions – 1 cup.
- Green chillies – 2 No.
- Ginger garlic paste – 1 tbsp.
- Dry coconut powder – 2 tbsp.
- Coriander leaves – 2 tbsp.
Instructions
- Tell the butcher to cut mutton pieces into small cubes and clean them.
- Put mutton pieces in a pressure cooker and put a little turmeric powder, oil, 1 ½ tbsp. salt and required water to cook based on the tenderness of the meat.
- In a pan dry roast coriander seeds, jeera, sonf, cloves, dry red chillies, black peppercorns and green cardamoms on low flame and keep aside to cool.
- In the same pan add little oil and fry curry leaves, once it stops spluttering add onion slices.
- Saute for a while and add green chillies and ginger-garlic paste. Mix till the raw flavour is cooked.
- Add mutton along with stock and cook on medium to high flame till water is evaporated.
- Meanwhile, make a fine powder of roasted spices. Sprinkle this powder along with a pinch of turmeric powder and mix well.
- Sprinkle dry coconut powder and garnish mutton fry recipe with coriander leaves. Serve hot.

How to make mutton fry recipe:
1. Clean mutton pieces and put them in a pressure cooker. Sprinkle ¼ turmeric powder, 1 ½ tbsp. salt, 2 tbsp. oil and water.
2. Based on the tenderness of the meat, pressure cook for 2-4 whistle blows. Transfer meat along with stock into another bowl and keep aside.
3. On a pan add coriander seeds, cumin seeds, fennel seeds and cloves.
4. Add cinnamon sticks, black peppercorns, green cardamoms and dry red chillies and dry roast on low flame.
5. Once we feel the aroma of spices and dry roasted perfectly, transfer to another plate and let cool.
6. Add 2-3 tbsp. Oil and fry curry leaves. Usually, curry leaves splutter so be careful.
7. Put 1 cup of thin wafers of onions, slit green chillies and ginger garlic paste. Saute for a while.
8. Pour cooked mutton pieces along with stock and cook on medium to high flame without lid.
9. Once roasted spices are cooled, put them in a mixer grinder and make soft powder.
10. Sprinkle ¼ tbsp. turmeric powder and ground spice powder and mix well.
11. If mutton pieces are not properly cooked, lower the flame or else cook on medium to high flame till we get the thick texture or become dry.
12. To enhance the flavour of the Mutton Fry Recipe, add dry coconut powder and coriander leaves. Mix and serve hot.
