- When making in large quantities, coat bendi with spices and mix flour in small batches so that we mix flour to that quantity that is deep-fried as bendi releases water or moisture.

Ingredients
- Bendi/ okra/ lady’s finger – 250 gms.
- Water – required quantity
- Turmeric powder – ¼ tbsp.
- Salt – 1 tbsp.
- Coriander powder – ½ tbsp.
- Jeera/ cumin powder – a pinch
- Garam masala powder – ½ tbsp.
- Ginger garlic paste – ¼ tbsp.
- Red chilli powder – ½ tbsp.
- Food colour red – a pinch
- Garlic cloves – 2 tbsp. crushed
- Curry leaves – 2 tbsp.
- Groundnuts – ½ cup
- Green chillies – 3-4 No. based on the spiciness you need
- Besan flour – 1 tbsp.
- Rice flour – 1 tbsp.
- Corn flour – 1 tbsp.
Instructions
- Clean and cut okra into thin pieces, cut diagonally so that we can get thin and large size pieces.
- To mix spices evenly, In a bowl add very little water to mix all spices.
- Add salt, coriander powder, turmeric powder, garam masala powder, jeera powder, red chilli powder and ginger garlic paste.
- People who are health conscious can avoid food colour or else you may add a pinch of food colour (red).
- Add bendakaya and mix well till the spices are coated well. Add ground nuts, green chillies and curry leave.
- Coat this mix with flours which give flavour (besan flour) and others give crispiness (corn flour).
- If you are making in small quantity then mix all flour making bendi coat dry.
- Heat oil in a pan and deep fry above mix on low flame till they turn crisp.
- Bendi 65 recipe turns crisp when they are cooled. Serve them as a side dish along with rice dishes.

How to make Bendi 65 Recipe:
1. Slice lady’s finger thin and diagonally and keep aside.
2. In a bowl add a little water, turmeric powder, salt and coriander powder.
3. Add Jeera powder, garam masala powder, ginger garlic paste and red chilli powder.
4. Although it is not recommended to give eye compelling texture add a pinch of red food colour and crushed garlic cloves for extra flavour.
5. Add sliced okra and mix well till spice liquid is well coated.
6. Put a few strands of curry leaves and groundnuts to give a crunchy flavour.
7. Add thin slices of green chillies, besan flour, rice flour and cornflour. Mix well.
8. Put a small piece of mix and check the oil temperature when the oil is ready, put bendi 65 and deep fry.
9. Deep fry on low to medium flame till they turn golden brown and crisp.
10. Serve Bendi 65 Recipe once cooled as they give a crunchy flavour once cooled.
