Mutton Gravy Recipe | Mutton Curry
The Mutton Gravy Recipe is one of the authentic recipes served along with steamed rice or with roti. Usually, mutton can be made in different styles based on the spices we add.
Most of the Indians love to eat Lamb meat or chicken as they are rich in protein. Learn how to make restaurant-style mutton gravy which is made with a blend of spices and which have a thick gravy.
People who have good knowledge of choosing the right meat can make this recipe in 20-30 minutes but usually, most of the people end up either cooking very soft or hard pieces.
When you feel mutton is not tender (if you bought sheep meat instead of goat lamb) then go for the marination process which not only makes mutton curry soft but also helps in absorbing spices. Also adding curd instead of lemon or tomatoes while marinating helps to keep meat soft.
TIPS to make Perfect Mutton Gravy Recipe:
- When we choose tender lamb meat we can fry mutton pieces and then cook.
- If we are not sure then ask the butcher if this meat cooks in less time or not.
- Based on the size and special part of the meat one can find whether meat is tender or not.
- If mutton doesn’t cook fast, you can add papaya or a little alcohol to cook faster.
- We can even marinate mutton for 30 minutes when you feel it’s not tender.
- Choose meat along with bones as they release additional flavor while cooking.
- Meat should be chopped into small and even-sized pieces so that they cook fast and absorb spices.

Ingredients
- Mutton – 500 gms.
- Cinnamon sticks – 4 No.
- Cloves – 4 No.
- Green cardamoms – 3 No.
- Cashew – 3 tbsp.
- Oil – 200 ml.
- Onions – 1 bowl cut into thin slices
- Bay leaves – 2 No.
- Turmeric powder – ½ tbsp.
- Salt – 1 tbsp.
- Tomatoes – 1 No. Large size
- Ginger garlic paste – 1 tbsp.
- Red chilli powder – 1 tbsp.
- Coriander powder – 1 tbsp.
- Mint leaves – 1 tbsp.
- Coriander leaves – 1 tbsp.
Instructions
- Based on the tenderness of the meat, you can either choose marination or direct cooking.
- Our version of cooking is direct cooking, we didn’t even use a pressure cooker to cook this recipe.
- First dry roast spices, add cinnamon sticks, green cardamoms, cloves and cashew on a pan and roast till you feel the aroma of the spices.
- Make sure roasting of spices is done on low flame and is transferred to another plate immediately once they are roasted.
- In a pan add 3-4 tbsp. oil and fry onions to golden brown colour and make a paste of it once cooled. Keep aside.
- Clean mutton pieces with water and keep aside.
- Add little oil in a pan and put bay leaf, sauté for a second and add mutton pieces.
- As meat takes time to cook, put a little salt and turmeric powder, mix and cook for 5 minutes with lid covered.
- Meanwhile, make a coarse powder of dry roasted spices and add tomatoes to make a soft paste.
- Add tomato paste, onion paste, ginger-garlic paste and mix well.
- Sprinkle coriander powder, red chilli powder and 500 ml. water and mix well.
- As mutton takes time to cook, cover the pan with a lid and cook for 10-15 minutes till pieces turn soft.
- Check the pieces, if needed cook for more time or else garnish Mutton Curry with mint and coriander leaves and serve hot.

How to make mutton gravy recipe:
1. Dry roast cinnamon sticks, cloves, green cardamoms and cashew on a pan with a low flame and transfer to another plate. Keep them aside to cool.
2. Heat oil in a pan and deep fry onion pieces on low flame till they turn a golden brown colour. Transfer to another bowl and keep aside.
3. Add 4 tbsp. oil in a pan and add bay leaves. Clean mutton and drain all water, put them in oil.
4. Sprinkle turmeric powder and salt. Mix and cook for 5 minutes with lid covered.
5. Add dry roast spices in a mixer grinder bowl, ground to powder and add tomatoes. Make a soft paste.
6. In another mixer grinder bowl, add fried onions and make a soft paste.
7. Add fresh ground ginger garlic paste, tomato paste, onion paste and mix well.
8. Sprinkle red chilli powder and coriander powder. Mix and cook for a minute.
9. Add 500 ml. water, mix and cook for 10-15 minutes till mutton cook with lid covered.
10. Garnish Mutton Gravy Recipe with mint and coriander leaves and serve hot.
