Easy Poha Upma Recipe, Atukula Upma, Aval Upma Recipe
Poha Upma or Atukula Upma is one of the easiest South Indian Breakfast recipes made with flattened rice and other spices. Learn how to make this recipe with step by step image instructions along with tips and video.
Our version of Aval upma is simple; if you want we can even add veggies to it. When adding vegetables we can save time by boiling them separately by adding a pinch of salt to them or else slicing them into small pieces and cooking with onions with the lid covered.
When we add extra vegetables like potatoes, carrots, beans, etc. we can add a little salt while boiling or else we need to adjust the salt. The lemon extract gives it a tangling flavour while peanuts and chana dal give a crunchy flavour.
In generic we call this recipe as Poha upma whereas Atukula Upma in Andhra and Avalakki or aval upma in Karnataka. Whatever the name we call with, poha is one of the healthy ingredients made by parboiling rice and then flattening it.
Based on the quality, we get in two variants thin and thick. Each version has its own importance, our recipe uses a thick version.
TIPS to make perfect Poha Upma or Atukula Upma:
- Based on the quality of poha soaking time depends, so thin poha takes less time.
- If you want more nutrition we can add boiled vegetables.
- If you are adding veggies directly to this recipe, lower the temperature and cook on low to medium flame with the lid covered.
- Lemon juice must be sprinkled at the end of the recipe or else the recipe may taste bitter.
- If you want the crunchy flavour to this recipe, add a generous quantity of peanuts, chana dal and moong dal.
- To give tangling flavour, add a few drops of lemon extract at the end of the recipe.

Ingredients
- Poha/ Atukulu – ½ bowl.
- Water – Required
- Oil – 4 tbsp.
- Peanuts – 3 tbsp.
- Chana dal – 1 tbsp.
- Moong dal – 1 tbsp.
- Mustard seeds – ½ tbsp.
- Cumin seeds – ½ tbsp.
- Onions – ½ bowl
- Green chillies – 2 tbsp. finely grated
- Curry leaves – 2 tbsp.
- Salt – 1 ½ tbsp.
- Turmeric powder – ½ tbsp.
- Lemon – ½ piece
- Coriander leaves – 1 tbsp.
Instructions
- Soak flattened rice in water and remove extra water either by pressing gently or putting it in a skillet.
- Heat oil on a pan, put peanuts, moong dal, chana dal, mustard seeds and cumin seeds, sauté for a while.
- Add onions, green chillies, curry leaves, turmeric powder and salt. Mix well.
- Once water is drained from poha, put them in the above mix and stir to mix all ingredients.
- Cook for a minute and squeeze a half piece of lemon and mix again.
- Garnish Poha upma or atukulla upma with coriander leaves and serve hot.

How to make Poha Upma or Atukula Upma:
1. Take Poha and pour a little water so that they get submerged, soak for a while.
Note: Based on the thickness and quality, soak time varies, if they are thick and hard then they may take 5-10 minutes or else just rinse and drain water.
2. Clean, rinse and drain water through the skillet. Pour poha over a skillet and keep aside so that all water drains.
3. Put a pan and add oil, peanuts, chana dal and moong dal.
4. Add cumin and mustard seeds and sauté for a while.
5. Once mustard seeds start spluttering add onions and green chillies.
6. Add curry leaves, salt and turmeric powder. Mix all ingredients and cook on medium temperature.
7. Put drained atukulu over this spice mixture and mix well.
8. At last, put ½ piece of lemon in a lemon extractor and squeeze over upma. Mix well.
9. Garnish Poha Upma or Atukula Upma with coriander leaves and serve hot.
