I had many requests to make recipes with oats and millet as they are healthy and have become one of the staple foods for diabetic patients.
If vegetables are readily sliced in your hand then this recipe takes not more than 10-15 minutes to make. Here 5-10 minutes of time is consumed by vegetables itself. When vegetables are sliced into small pieces it takes less time to cook and release their nutrition.
As Vegetable Oats upma has a generous quantity of veggies we can have it directly. If still, you want we can have it accompanied with coconut chutney.
Usually, many of us like to have oats as breakfast by just adding a little milk to it. But our version is more nutritious. When a person has a healthy breakfast his day becomes energetic and kick start his day as this has soluble fiber.
TIPS to make Healthy Mixed Vegetable Oats Upma Recipe:
- If you want this recipe to be done fast, cook vegetables separately but use leftover water used to boil veggies.
- While adding oats we need to stir continuously or else lump formation may occur.
- Adding more veggies consumes a bit more salt so adjust as per your taste.
- Water should be used in 1:1 ½ proportions as we have even used vegetables. Or else we get meshy.

Ingredients
- Rolled Oats – 1 bowl 200 gms.
- Oil – 3 tbsp.
- Mustard seeds – ¼ tbsp.
- Cumin seeds – ½ tbsp.
- Ginger pieces – ¾ tbsp. finely sliced
- Green chillies – 5 No. slit into two halves
- Soaked chana dal – 2 tbsp.
- Sliced onion – ½ cup sliced
- Curry leaves – 2 tbsp.
- Asafetida – A pinch
- Carrot – 3 tbsp. finely sliced
- Beans – ½ cup finely sliced
- Green Peas – 2 tbsp.
- Salt – ½ tbsp.
- Water – 1 ½ bowl.
- Coriander leaves – 1 tbsp.
Instructions
- In pan heat oil, add ginger pieces, mustard seeds, cumin seeds and soaked chana dal. Saute for a while.
- Add onions, green chillies, curry leaves, asafetida and mix well.
- Continue adding finely sliced veggies (beans and carrot) and green peas.
- Sprinkle salt, mix all ingredients and cover the lid and cook veggies till they are slightly cooked.
- Pour 1 ½ cup water to veggies and cook further till the water turns boiling.
- Add oats, stir continuously so that oats are mixed well and there are no lumps.
- Usually, oats get cooked fast so once they are done garnish with coriander leaves.
- Vegetable Oats upma tastes great when it is served hot.

How to make Vegetable Oats Upma Recipe:
- Heat oil in a pan, add mustard seeds, cumin seeds and ginger pieces.
- Add green chillies, soaked chana dal, onion slices and curry leaves. Sauté for a while.
- Continue adding asafetida, carrot, beans and Green Peas. Sauté for a while.
- Sprinkle a little salt, mix and cook till veggies get cooked with lid covered.
- Add 1 ½ cup of water and bring it to boil with lid covered.
- Put oats meals in small portions and stir continuously so that there are no lumps.
- Garnish with coriander leaves.
- Serve the Vegetable Oats Upma recipe hot.
